This chicken fajitas slow cooker recipe is ridiculously easy to cook and contains only 7 ingredients!

 This may be the simplest slow cooker recipe I have ever made.

As I've mentioned before, my husband LOVES any kind of Mexican food.  So this past week I had purchased a variety of peppers and needed something to do with them.

I came up with this simple chicken fajita recipe that is not only easy but also nutritious!

I love to save time in the kitchen and don't always plan ahead. Ok, most of the time I do not plan ahead.

So I try to make meals that don't require chicken to be thawed beforehand.  I purposely purchase chicken breast tenderloins instead of chicken breasts since they are much thinner than regular chicken breasts and come in fairly uniformed pieces.

This is why you'll often see my 2-ounce portion sizes in my recipes.  My favorite frozen chicken breast tenderloins come in 4-pound bags at Sam's Club.

Yes, I cook lots and lots of chicken.

Simple Steps to Make these Chicken Fajitas

All you need to do is layer your crockpot or slow cooker with the ingredients starting with frozen chicken breast (or thawed).

Then add salsa, sliced peppers, and onions, taco seasoning and cook!

Once the chicken is thoroughly cooked (about 3 to 4 hours), remove, shred with a fork, or slice and return to the slow cooker for about 30 minutes.

Finally, just place the chicken and vegetables in a tortilla and add your favorite toppings.

 Not only did Dan ask if this recipe could be put into our weekly rotation but my kids also loved it!

Any time they can "make" their own dinner it's a big hit!  I gave them each part separate (tortilla, chicken/vegetables, shredded cheese) and they were able to make their own fajitas or eat each part separately.

The more choices and independence they have with dinner the better!

Chicken Fajitas {Slow Cooker}

Prep Time 15 mins

Cook Time 4 hrs

Total Time 4 hrs 15 mins

  • 9 2 oz. chicken breast tenderloins frozen
  • 1 red pepper, sliced
  • 1 yellow pepper, sliced
  • 1 medium onion, sliced
  • 3 tablespoons taco seasoning (about 1 packet)
  • 2 cups salsa
  • 8 whole wheat tortillas
  • Add chicken, salsa, peppers, onions, and taco seasoning in layers to slow cooker.

  • Cook on high for 3-4 hours or 4-6 hours on low or until chicken is thoroughly cooked.

  • Remove chicken, shred or cut into strips and place back in slow cooker.

  • Stir all ingredients and cook for another 30 minutes.

  • Wrap chicken and vegetables in whole wheat tortillas and add cheese and sour cream if desired.
